Tales of inadequate nutrition education are common in high schools all across America. Limited choices in the lunch line are contributing to the recent rise in childhood obesity and in general, public schools do not offer an adequate nutrition and fitness program to direct students towards a bright, healthy future. 50-80% of obese adolescents remain obese throughout adulthood. Salad bars allow for easy distribution of healthy foods in schools and because they satisfy the requirements, count as a reimbursable meal. Finally, salad bars work. They are frequently used; over 70% of low-income students, who benefit the most from reimbursable lunches, interviewed in a study ate from the salad bar at least three to four days per week.
