In the US servers make 2-3 dollars an hour. Paychecks are normally $0 after taxes, so ALL income is made from tips. Assuming servers make 20% tips all throughout their shift, they only pocket roughly 15% after tip-out. When customers leave less than 15% there server is actually having to pay for that person to eat there.
This is not even including the time servers put in doing side-work, which goes unpaid, because the server is not getting tipped for this. Side-work can sometimes take as long as an hour. That adds up. And depending on the place some mangers have the severs come in up to 2 hours before the restaurant is even open. This also goes unpaid.
This payment method is severely flawed and something needs to be done about it.
