Remove the "Black" and "White" options when filling out various forms such as SAT/ACT or job interview papers

Recently I had filled out a form and noticed that when I was checking off my race, it had listed white and black along with various others. However, these various others were more specific such as Eskimo or Pacific Islander. Personally I feel as if many groups of people are being stereotyped into a color category. I don't believe being of Italian or Irish descent means you're white, or if you're of Sudanese descent you are black. I hope everyone else understands what I'm getting at
